Peggy’s Stovetop Potatoes
- Cast iron frying pan
- Fingerling or other small potatoes, washed and scrubbed
- 2 tbsps unsalted cultured butter
- coarse kosher salt
- Wash and scrub potatoes.
- In cast iron frying pan, melt butter.
- When butter starts to bubble, sprinkle salt liberally across pan.
- Add potatoes.
- Cook on medium heat for 5 minutes.
- Turn heat to low, cover, and toss every 5-10 minutes.
- Cook until brown and tender.
