Peggy’s Stovetop Potatoes


  • Cast iron frying pan


  • Fingerling or other small potatoes, washed and scrubbed
  • 2 tbsps unsalted cultured butter
  • coarse kosher salt


  • Wash and scrub potatoes.
  • In cast iron frying pan, melt butter.
  • When butter starts to bubble, sprinkle salt liberally across pan.
  • Add potatoes.
  • Cook on medium heat for 5 minutes.
  • Turn heat to low, cover, and toss every 5-10 minutes.
  • Cook until brown and tender.
